White Chocolate Coconut Caramels

     Christmas time means a lot of candy-making in my house. There is an overwhelming variety of treats one can make this time of year, and it can be hard to choose just which one. I love caramel, but I am not a huge fan of candy thermometers. I like this recipe because it is made in the microwave and is nice and quick.
     This particular caramel recipe uses pre-packaged caramels (the square kind you can find in the grocery store). Things are jazzed up a bit with the addition of white chocolate, coconut, and peanuts.
White Chocolate Coconut Caramels
2 teaspoons butter
24 caramels, unwrapped
2/3 cup packed coconut
1/2 heaping cup white chocolate chips
1/2 heaping cup honey roasted peanuts
1. Line a bread pan with foil. Spray with non-stick cooking spray.
2. In a medium bowl, combine ALL ingredients. Microwave on HIGH power for 1 minute. Stir.
3. Microwave another 30 seconds. Stir. If caramels are not yet melted, keep microwaving in increments of 10 seconds until they are.
4. Pat mixture into pan. If desired, sprinkle with some additional coconut and pat down again.
5. Cool on shelf about one hour before cutting into one inch squares.
*Feel free to substitute the kind of chocolate chips and nuts used in this recipe.
