Almond Squares
     Almond squares are my go-to recipe. If I have unexpected company coming or just feel like a quick treat, I bake these. Next to chocolate chip cookies, I have made these more than any other recipe in my collection. Although they may remind one of a lemon bar, they have a wonderful almond taste and cake-like texture.
     Everything can be mixed together in one bowl in under 10 minutes. You can make them thick and tall  by baking them in a 9″x9″ inch pan or shorter in a 13″x9″ pan. They can be served warm or cold, with or with out ice cream. I like to top mine with a generous portion of powdered sugar for an extra zing of sweetness.
Melted butter; Do not let cool

Almond Squares

1 cup butter, melted
2 cups white sugar
4 large eggs
2 cups all-purpose flour
2 teaspoons almond extract

1. In a large mixing bowl, melt the butter in the microwave.
2. Whisk in the sugar and eggs until light and fluffy.
3. Whisk in the flour and almond extract.
4. Pour into a greased 9″x9″ or 13″x9″ pan. bake at 350 degrees for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
5. Let cool on a wire rack and dust top with powdered sugar.

A center piece-My favorite because they are a little gooey compared to the edges.
