Chocolate Covered Cherries
     When I was a child, one of the presents my mom always gave my grandfather for Christmas was a box of chocolate covered cherries. He looked forward to them every year and was always willing to share a couple with his grandkids.
     I realized on New Year’s day that I went through the holiday season without ever having one. That made me wonder if you could make them homemade. I found several recipes online, and combined them to develop one that I liked. The result was almost unbelievable; Not only did they taste like the ones from the box–they tasted better! The recipe itself is not difficult to make; it only took about 40 minutes altogether and was well worth the effort. Believe me, this one is definitely going into my recipe box.

Cool several hours before dipping in chocolate.

Chocolate Covered Cherries

3 dozen maraschino cherries
2&1/2 cups powdered sugar
1/4 cup butter, softened
1/4 cup light corn syrup
12 oz. milk chocolate chips

1. Drain the maraschino cherries on paper towels. Set aside.
2. In a medium bowl, mix together the butter, corn syrup, and powdered sugar until a firm sugar dough forms. Add more powdered sugar if necessary.
3. Wrap each cherry in about two teaspoons of the dough. Roll between both hands to make a uniform ball. Set on waxed paper.
4. Place wrapped cherries in freezer for several hours.
5. Melt milk chocolate chips. Dip frozen cherries in the chocolate, shaking off any excess. Set on waxed paper to harden.
6. Store in refrigerator or in airtight container. As these age, the cherry juice will soften the sugar dough and make the filling more like an authentic chocolate covered cherry.
