     Have you ever had a craving for doughnuts but didn’t feel like driving to Tim Horton’s? Sure, you could fry some homemade ones, but that takes a lot of time, effort, and oil. Well, I have a solution for you: Doughnut Muffins. Just like the name implies, they are muffins that taste very similar to doughnuts. The texture is cake-like and the topping is beyond your dreams goooood! Dipping them in butter certainly doesn’t save you too many calories, but they are still fun, easy, and will satisfy that craving.

Serves: 12
  • 12 Tablespoons butter, softened (1&1/2 sticks)
  • ¾ cup + 2 Tablespoons white sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 2&1/2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon nutmeg
  • ½ cup + ⅓ cup whole milk
  • 2 Tablespoons buttermilk
  • ------------
  • ½ cup butter, melted (1 stick)
  • 1 cup white sugar mixed with 1 Tablespoon cinnamon
  1. Preheat oven to 350 degrees. Cream butter and sugar with a mixer. Beat in eggs. Beat in both types of milk.
  2. Sift together flour, baking powder, baking soda, salt, and nutmeg. Add to wet mixture gradually, mixing until well-combined and smooth.
  3. Grease and flour 12 cup muffin tin. Scoop about ½ cup of batter into each tin to make even with rim. Bake until firm to the touch, 30-35 minutes.
  4. When muffins are cool enough to handle, dip or brush them with melted butter. Roll in cinnamon-sugar mixture until well-covered.
