Hot Artichoke Dip on a wheat thin cracker
     For those of you that like the artichoke dip served at popular chain restaurants, I have an excellent recipe for you. This dip is a lighter version with loads of flavor. You would never know that it is low-fat and low-calorie because it tastes so rich. What makes this artichoke dip special is the addition of green chile peppers which kick it up a notch. It tastes great on wheat thins or baked tortilla chips. It is a great appetizer before a chile or soup dinner. Enjoy!

Serves: 6-8
Ingredients
  • 12 oz. can artichoke hearts, drained and snipped
  • 1 cup light miracle whip
  • 1&1/2 cups three cheese parmesan blend
  • 8 oz. container light chive & onion cream cheese, softened
  • 7 oz. can green chile peppers
Instructions
  1. Preheat oven to 350 degrees. In a medium bowl, mix together all ingredients. Pour into a 1&1/2 quart casserole dish.
  2. Bake for 30-35 minutes or until slightly browned and bubbly.
  3. Serve with wheat thins or tortilla chips.
