Here is a great recipe for people who like bean salads…My mom and I first saw it on Paula Deen’s Food Network show, decided to try it, and now it is a keeper. It only takes a few minutes to throw together and makes a terrific side dish. It keeps well in the refrigerator for several days.
On a side note, you can usually find Greek Seasoning in the spice section at specialty grocery stores. It runs a little on the expensive side, but you can make your own mixture by combining the following: 1 Tablespoon dried oregano, 2 teaspoons dried mint, 2 teaspoons dried thyme, 1 teaspoon dried basil, 1 teaspoon dried marjoram, 1 teaspoon dried minced onion, and 1/2 teaspoon dried minced garlic.

Ingredients
  • 2 cans yellow wax beans
  • 2 cans green beans
  • 2 cans red kidney beans
  • 2 green peppers, chopped
  • ½ cup diced red onion
  • 1 cup vegetable oil
  • 6 Tablespoons red wine vinegar
  • 2 Tablespoons dijon mustard
  • ¼ cup Greek seasoning
Instructions
  1. Drain the beans in a colander. Pour into a large bowl.
  2. Add the peppers and onion. Stir to combine.
  3. For dressing, whisk together oil, vinegar, mustard, and seasoning. Pour over bean mixture until incorporated.
  4. Cover and let marinate for 4 hours before serving.
