White Chip Cocoa Brownies
     I love brownies with frosting, but my husband prefers them plain. This recipe has white chocolate chips sprinkled over the brownie batter, so there is no need for the frosting. It is the easiest, quickest, yet tastiest one bowl brownie recipe I have tried thus far. The texture is somewhat chewy with a fudgy center. If you prefer more cocoa taste, substitute some milk or semi-sweet chocolate chips for the white.

Do the toothpick test NEAR the center, not in the center of the pan.

Serves: 9
  • 1 cup white sugar
  • 1 cup cake flour
  • ¼ cup baking cocoa
  • ½ teaspoon salt
  • 2 eggs + 1 egg yolk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup white chocolate chips
  1. Preheat the oven to 350 degrees. Grease a square 9" baking pan with cooking spray.
  2. In a medium mixing bowl, combine all ingredients except the white chocolate chips. Whisk together until smooth. Pour into prepared pan.
  3. Sprinkle top with white chocolate chips. Bake for 17-20 minutes, or until a toothpick inserted near the center comes out clean.
