Cookies & Cream Brownie
     Over the weekend, my mom and I were having a phone conversation about desserts we loved. I asked her if there was any sweet in the world she could have then and there, what it would be. She quickly replied “brownies.” She mentioned that she had a boxed mix in the cupboard that she has been wanting to make, but I told her not to bother. I had an idea for some brownies that had been swimming around in my head for awhile that I wanted to try.
     I wanted to make a flavor-filled brownie with chopped Oreos and white chocolate chips. I used the brownie base from my grandmother’s Mississippi Mud recipe, substituting the cookies and chips in place of the walnuts. The addition of the Oreo cookies add a pleasant crunch to the moist brownies, and the white chocolate chips give you a sweet punch of vanilla flavor. My husband ate these plain, but when I brought them to my mom’s house she and my dad both put canned chocolate frosting on top. Frosted or not, everyone came to a consensus: these cookies and cream brownies are a keeper!

  • 4 large eggs
  • 1 cup butter, softened
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1&1/2 cups flour
  • ¼ cup unsweetened cocoa powder
  • dash salt
  • 18 Oreo cookies, coarsely chopped
  • 1 cup white chocolate chips
  1. Preheat oven to 350 degrees. In a large mixer bowl on medium speed, beat eggs, butter, sugar, and vanilla until light and fluffy, scraping sides of bowl occasionally.
  2. Add flour, cocoa powder, and salt. Beat just until well blended.
  3. Fold in chopped Oreos and white chocolate chips. Spread batter evenly into a greased 9"x13" baking pan. Bake for 40 minutes. Let cool on a wire rack. Frost if desired.
