Mint Oreo Fudge
     Of all the fudges that I have made, Oreo fudge has always been my favorite. My mother, on the other hand, prefers peppermint fudge. I decided to put the two recipes together, and came up with a very refreshing mint Oreo fudge. Almost everything about the traditional Oreo fudge has stayed the same, except I substituted peppermint extract for the vanilla and added some green food coloring to the mixture.
      If you’d like to get a better idea of how it tastes, think of a Mint Oreo blizzard. Now think of one in solid form. Voila! You have mint Oreo fudge. (And it tastes great chilled from the refrigerator too)!

Mint Oreo Fudge

3/4 cup butter (1 & 1/2 sticks)
3 cups white sugar
5 oz. can evaporated milk
12 oz. white chocolate chips
1 teaspoon peppermint extract
several drops green food coloring
7 oz. jar Marshmallow Creme
12 crushed Oreos**
1. In a large saucepan over medium heat, stir together butter, sugar, and evaporated milk. Stirring constantly, bring mixture to a ROLLING boil. Boil and continue stirring constantly for 5 minutes.
2. Remove from heat and immediately stir in white chips, peppermint extract, and green food coloring until mixture is smooth.
3. Quickly stir in marshmallow creme until no lumps remain.
4. Stir in crushed Oreos until thoroughly mixed.
5. Pour into a greased 9×13 inch pan. Let cool four hours on shelf or almost 2 hours in refrigerator before cutting.
*To crush Oreos, you can use a food processor, or even easier, a quart freezer bag. I put the cookies in the bag, squeeze out any extra air, and step on them with my feet until the cookies are in tiny pieces. (This is a great job for the kids. My daughter, who is a year and a half old, likes to help me out by stomping on the cookie-filled bag)!

    Great idea to combine the flavours although I think I’d rather just Oreo. I must try more fudge recipes but I can’t seem to stop making peanut butter fudge. x
