White Chocolate Penuche Bars
     Last night I thought I would make some almond squares, one of my all-time favorite go-to recipes. Looking at the ingredients, I realized that I didn’t have enough granulated sugar in the container to make them. Rather than scratching the project, I decided to change it up a bit. I substituted brown sugar for the white and vanilla extract for the almond. I also sprinkled a bag of white chocolate chips on top of the batter before baking.
     This dessert turned out wonderfully and had the same texture of the almond bars. The addition of the white chocolate chips kicked it up a notch in sweetness and structure. The brown sugar added a wonderful penuche flavor to the treat. Next time I may try using dark brown sugar to enhance this flavor, but the bars were still exceptionally good. What can I say? I LOVE it when experiments give me a new keeper for my recipe collection.
Just put all of the ingredients except the chips in a large mixing bowl.

Whisk until nice and smooth.

Sprinkle the white chocolate chips evenly over the batter.

The bars are finished when the edges are slightly browned and a toothpick tests done.

A soft, fudge-like filling and a crispy white chocolate surface: Yum!

White Chocolate Penuche Bars
1 cup butter, melted
2 cups packed light brown sugar
2 cups all-purpose flour
4 large eggs
1 Tablespoon vanilla extract
12 oz. bag white chocolate chips

1. Preheat oven to 350 degrees. In a large bowl, combine butter, brown sugar, flour, eggs, and vanilla. Whisk until smooth. Pour batter into a greased 9″x13″ pan.
2. Sprinkle the top of the batter with the white chocolate chips, distributing evenly.
3. Bake for 32-35 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack before cutting.
