White Chocolate Peppermint Cookies
     For St. Patrick’s Day I decided to bake some cookies for my husband’s students. First I made a batch of white chocolate pistachio cookies using instant pistachio pudding mix in the dough. For some reason unbeknownst to me, the dough turned pale while baking so barely any green could be seen. Next I decided to use green food coloring to enhance the color, but instead of pistachio mix I used instant french vanilla pudding mix and peppermint extract. The food coloring allowed the dough to stay green even after baking, and the white chocolate chips nicely complimented the peppermint extract. St. Patty’s Day here we come!

Serves: 48
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant french vanilla pudding
  • 1&1/2  teaspoons peppermint extract
  • about 10 drops green food coloring
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, peppermint extract, and green food coloring. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Drop by large tablespoonfuls onto cookie sheets. Bake for 9 minutes or until cookies are set around edges. Let cool on wire rack.
