White Chocolate Pistachio Cookies
     For St. Patrick’s Day I decided to make green cookies for my husband’s students. I used instant pistachio pudding mix in my mom’s pudding chip cookies and substituted white chocolate chips for the semi-sweet. Although the dough was green before baking, it turned a pale color after coming out of the oven. The cookies still tasted great and had a soft texture. The mild pistachio flavor was nicely complimented by the white chocolate chips.

Serves: 48
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant pistachio pudding
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pistachio pudding mix, and vanilla. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Drop by large tablespoonfuls onto cookie sheets. Bake for 9 minutes or until cookies are set around edges. Let cool on wire rack.

  1. These look great! One of my favorite cookie recipes has vanilla pudding in it and I’m a huge fan of pistachio pudding! I’ll have to try these.
