Oatmeal Whoopie Pies

 

Two days ago I posted the recipe for Chocolate Whoopie Pies. These are awesome if you are a fan of milk chocolate and lots of filling. However, my heart still belongs to my recipe for Oatmeal Whoopie Pies. Have you ever had the Little Debbie oatmeal creme pies? Well, these taste very much alike but EVEN BETTER, (I promise)! The oatmeal cookies are soft and chewy, and the filling is rich with that sweet bakery frosting and marshmallow flavor. I like these so much, it would be an injustice to go back and eat the store-bought brand.

Ingredients
  • FOR THE OATMEAL COOKIES:
  • 2 cups light brown sugar, packed
  • ¾ cup butter, softened
  • 2 large eggs
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 Tablespoons boiling water
  • 2&1/2 cups all-purpose flour
  • 2 cups quick cooking oats
  • ------------
  • FOR THE CREME FILLING:
  • 2 (7oz.) jars marshmallow creme
  • 1 cup shortening
  • ⅔ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt dissolved in 4 teaspoons hot water
Instructions
  1. For the oatmeal cookies: Preheat oven to 350 degrees. Lightly grease baking sheets.
  2. Cream together butter and sugar. Stir in eggs. Add salt, baking soda, baking powder, cinnamon, and flour. Stir in boiling water, mixing well. Stir in oats.
  3. Drop by large spoonfuls onto baking sheets. Bake for 10-11 minutes, just until edges are slightly golden. Cool on wire racks. Place in freezer while preparing filling.
  4. For the filling: Beat the marshmallow creme, shortening, powdered sugar, vanilla, and water with a mixer on low speed until combined. Then beat on high speed until smooth and fluffy.
  5. Once filling is ready, remove cookies from freezer. Spread filling on bottom side of half the cookies. Place another cookie over the filling, top-side up.
