Slow Cooker Seasoned Roasted Chicken & Vegetables

     Today I am changing things up a bit and posting a slow cooker recipe. All you need to make this is a roasted chicken and whatever vegetables you have on hand. The chicken is fall-off-the-bone tender and extremely flavorful.

cooked to an internal temperature of 180 degrees
Slow Cooker Seasoned Roasted Chicken & Vegetables

Serves: 4-6
  • 1 roaster chicken, about 6 lbs.
  • 5 medium red potatoes
  • 2 large sweet potatoes
  • 7 large stalks celery
  • ½ onion
  • 1 Tablespoon rosemary
  • 2 teaspoons basil
  • 1 teaspoon sage
  • ¼ teaspoon garlic powder
  • salt & pepper, to taste
  • poultry seasoning, to taste
  1. Chop the potatoes, celery, and onion. Place in slow cooker. Season with salt and pepper to taste. Add rosemary, basil, and sage. Stir to coat.
  2. Ready chicken by removing any internal giblets. Coat the inside, outside, and underneath the skin with poultry seasoning as desired. Place whole chicken on top of vegetables.
  3. Cover and cook on LOW heat for 6 hours, or until a meat thermometer reads 180 degrees in thickest part of breast. Set to warm until ready to serve.

    my question is… is there a liquid for this receipe? Im thinking of making it this week, but cant figure out if its a water, or a chicken broth and theres no form of liquid in the receipe.

  3. There is no liquid ingredient for this recipe. The chicken and vegetables create their own juices as it bakes. Make sure you keep the lid of your slow cooker closed while it cooks so this process can occur. I would love to hear what you think of this recipe after you try it!

  4. This was really good! I did cheat a little and added 1 cup of chicken broth just to be safe… no extra money to afford a mess up meal this week 🙂 This made lots of juice afterall! So good to know. And impressively, my brother who hates crock pot meals and most chicken meals… thought this was pretty decent! Thats a good step too! And the potatoes were omg! I have permission to safe this receipe! So thanks for sharing.. I cant wait for Holiday season to come to make some of your goodies! Your goodies are too dangerous! 😛
