White Chocolate Almond Cookies
     Here is yet another experimentation of my mom’s pudding chip cookies. I have made so many variations on this recipe, but it never surprises me that they keep tasting better and better. This time I used white chocolate pudding mix, almond extract, and white chocolate chips in the dough. The dough itself was absolutely irresistible, let alone the baked cookies. It is basically a white chocolate lover’s dream – heavy little clouds of white chocolate goodness.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant white chocolate pudding
  • 1 teaspoon pure almond extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, and almond extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Drop by tablespoonfuls onto cookie sheets. Bake for 8 minutes or until cookies are set around edges. Let cool on wire rack.
