White Chocolate Chip Brownie Cookies
     We had some lovely yet unexpected company come to our house a few weeks ago. I needed to think of something quick I could make, glanced at my cupboards, and found a brownie mix that was almost out of date. (I almost always make my brownies homemade hence the bad date). I knew it would take too long for the brownies to cool in a pan, so I decided to make brownie cookies.
     Brownie cookies are really rather simple. All you need is boxed brownie mix, flour, oil, milk, and eggs. I threw in some white chocolate chips (surprised?) and there you have it: white chocolate chip brownie cookies. They taste just like a regular brownie except with a chewier texture. Simple, quick, and tasty…could I ask for any more?

White Chocolate Chip Brownie Cookies
1 (21.2 oz.) pkg. Betty Crocker Triple Chunk brownie mix
1/4 cup all-purpose flour
1/4 cup vegetable oil
3 Tablespoons milk
2 large eggs
1 (12 oz.) bag white chocolate chips

1. Preheat oven to 350 degrees. In a large bowl, stir together brownie mix, flour, oil, milk, and eggs until smooth. Stir in chips until incorporated.
2. Drop batter by tablespoons onto cookie sheets. Bake for 9-10 minutes, just until set. Let cool on wire racks.
