Chocolate Chocolate-Chip Muffins

     Time to brace yourselves folks: I have finally done it. A post with dark chocolate and nothing but dark chocolate. These muffins are courtesy of my father. A few months ago he came over and worked with my husband for an afternoon fixing a leaky air vent in our attic. I baked up these muffins as a thank you to him, since he is infatuated with anything dark chocolate. I actually tried a bite of one, but it was way too rich and dark chocolatey for me to finish. My dad raved about these muffins, but I’ll keep my white chocolate, thank you very much.

Serves: 12
Ingredients
  • 1&3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 Tablepoons cocoa powder
  • ¾ cup granulated sugar
  • 1 cup dark chocolate chips, plus more for sprinkling
  • 1 large egg
  • 1 cup milk
  • ⅓ cup + 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 400 degrees. Line a 12 cup muffin tin with paper liners.
  2. Combine the flour, baking powder, baking soda, cocoa powder, sugar, and chocolate chips in a large bowl.
  3. In a small bowl beat the egg with a fork. Add the milk, vegetable oil, and vanilla and whisk with the fork until combined.
  4. Using a large ice scream scooper, divide the batter and pour into prepared muffin tin. Bake for 17-18 minutes, or until top springs back when lightly touched with finger.
