Chocolate PB Chip Pretzel Cookies
     As I was perusing my kitchen cupboards the other day, I took note of a few ingredients which had not come out of the woodwork in a while. I had a bag of peanut butter chips, a small box of instant chocolate pudding, and a few small bags of pretzel twists. My first instinct was to whip up a batch of fudge, but on second thought I decided to develop a cookie.
     Using my mom’s pudding chip cookies as inspiration, I substituted the chocolate pudding mix for the french vanilla and the peanut butter chips for the semi-sweet chocolate chips. I broke the pretzel twists into small pieces, added it to the batter, and voila! You have a soft, rich chocolate cookie with a sweet essence of peanut butter and a nice crunch from the pretzel pieces. Success!

Serves: 17
Ingredients
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 small package instant milk chocolate pudding
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 10 oz. bag peanut butter chips
  • 1&1/4 cups chopped pretzel twists
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, and vanilla extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the peanut butter chips and chopped pretzels.
  5. Drop by ¼ cupfuls onto cookie sheets. Bake for 12 minutes or until cookies are set around edges. Let cool on wire rack.
