Reese’s Surprise Peanut Butter Pudding Cookies

Mini Reese Cup Peanut Butter Chip Cookie
    Last week I posted recipes for white chocolate Oreo surprise cookies and Triple White Chocolate Bliss cookies. What both of these recipes have in common are a hidden surprise in the center of the cookie. To continue this trend, I decided to add two miniature Reese cups to butterscotch flavored cookie dough that had been dotted with peanut butter chips. As the cookies baked, the Reese cups melted, leaving a soft chocolate and peanut butter layer just below the center of the cookie.
Cookie Dough + Reese’s Minis Peanut Butter Cups
The cookie dough is full of peanut butter chips.
After flattening the cookie dough in your hand,
place two Reese’s cups to the side.
Fold the dough over to cover the cups.
Roll the cookie dough around the cups and continue.

Ingredients
  • 1 cup butter, softened
  • 1 cup packed light brown sugar
  • 1 small pkg. instant butterscotch pudding
  • 1&1/2 teaspoons vanilla extract
  • 2 large eggs
  • 2&1/4 cups flour
  • 1 teaspoon baking soda
  • 1 (10 oz.) bag peanut butter chips
  • 1 (8 oz.) bag mini Reese cups
Instructions
  1. Preheat oven to 375 degrees.  In a large bowl, cream together the butter, brown sugar, instant pudding, and vanilla. Mix very well.
  2. Stir in eggs.
  3. Add flour and baking soda and stir very well.
  4. Stir in peanut butter chips. Drop cookie dough by large tablespoons onto ungreased cookie sheets.
  5. Taking one ball of dough at a time, flatten in between hands. Stick two mini Reese cups onto one half of the flattened disc. Fold the other half of the dough over the Reese cups. Roll into a ball, and place back onto the cookie sheet. Repeat with remaining dough balls.
  6. Bake for 10-11 minutes, or until lightly golden around edges.
