White Chocolate Craisin Oatmeal Cookies
     One of the unique attributes of white chocolate is that is pairs well with so many other ingredients. Here is a soft  pudding cookie that I developed using white chocolate chips, dried cranberries, and quick cooking oats. While the white chocolate provides smooth richness, the craisins and oatmeal add a pleasant chewy texture.

Serves: 72
  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant french vanilla pudding
  • 1&1/2 teaspoons vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup quick cooking oats
  • 1 12 oz. bag white chocolate chips
  • 1 cup Craisins
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, and vanilla extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the oatmeal, white chocolate chips, and Craisins.
  5. Drop by tablespoonfuls onto cookie sheets. Bake for 8-9 minutes or until cookies are set around edges. Let cool on wire rack.
