White Chocolate Funfetti Cookies
     I love funfetti cake. It is my all-time favorite kind of birthday dessert. When I was a child, my mom made the boxed funfetti cakes quite frequently; she knew it was the one kind of dessert that everyone enjoyed and could agree upon.
     I have made funfetti cookies before using the boxed mix, but I wanted to try it homemade this time. I added rainbow sprinkles to my white chocolate cookies and some almond extract for a frosting flavor. The result was a very colorful cookie that tasted even better than regular funfetti cookies. I have already made this recipe three times since my first try. Yum!

Ingredients
  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant white chocolate pudding mix
  • 1 teaspoon pure almond extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  • 1 cup rainbow sprinkles
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, and almond extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips and sprinkles.
  5. Drop by tablespoonfuls onto cookie sheets. Bake for 8-9 minutes or until cookies are set around edges. Let cool on wire rack.
