Crispy Salted White Chocolate Oatmeal Cookies
     I first saw the recipe for Crispy Salted White Chocolate Oatmeal Cookies on Smitten Kitchen about one year ago. It took me a long time to finally test the recipe out; my only regret is that I did not try it sooner! Smitten Kitchen puts this recipe as one of her top 5, and I would have to agree that they are way up there on my top recipe list as well.
     I found these cookies to be more on the chewy side…perhaps baking them a little longer would have resulted in a crispier cookie. I prefer a chewy cookie over a crisp one anyway, so this did not bother me. The addition of a tiny bit of sea salt to the top of these babies pushes them over the edge. Just make sure you don’t over do it on the salt; just a speck is needed.
     Since making the original recipe, I have made small adjustments to suit my taste. I will be posting these recipes and their results in the following blog posts. Stay tuned!

Crispy Salted White Chocolate Oatmeal Cookies

Serves: 60
Ingredients
  • 14 Tablespoons butter, softened
  • 1 cup white vanilla sugar
  • ¼ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2&1/2 cups rolled oats
  • 2 cups high-quality white chocolate chips
  • ¼ teaspoon coarse sea salt, for sprinkling
Instructions
  1. Preheat oven to 350 degrees. In a large bowl, mix together butter, sugar, egg, and vanilla until smooth.
  2. Stir in the flour, baking powder, baking soda, and salt.
  3. Add the oats and white chocolate chips, stirring until well-combined.
  4. Drop dough by tablespoons onto cookie sheets. Roll into balls. Sprinkle tops lightly with sea salt and press down lightly with fingers. Bake for 11 minutes, until cookies are golden around edges and set in the middle.
