Giant Triple White Chocolate Vanilla Bean Cookies
     This cookie is definitely on my top 5 favorite cookie list. I have made this recipe with several different sizes of scoops…1 tablespoon, 3 tablespoon, and 1/4 cup. Generally, the smaller your cookie the crispier it will be. Personally, I love a cookie that is a bit doughy in the center, which is what you get with a 3 tablespoon or 1/4 cup sized scoop.
     Instant white chocolate pudding gives a beautiful backdrop flavor to these cookies. I used two different kinds of white chocolate chips: Guittard (which is purer and more smooth) and Ghiradelli (which has a stronger flavor and harder texture). These chips permeate every centimeter of this rich and delectable delight. In order to give the cookies an extra punch of vanilla flavor, I scraped a large vanilla bean into the batter in addition to the vanilla extract. Pure heaven.
I used two kinds of high-quality white chocolate chips.

Ingredients
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white vanilla sugar
  • 1 small package instant white chocolate pudding
  • 1 teaspoon pure vanilla extract
  • 1 vanilla bean, scraped
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag Ghiradelli white chocolate chips
  • 1 12 oz. bag Guittard white chocolate chips
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, vanilla extract, and vanilla bean. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Drop by ¼ cupfuls onto cookie sheets. Bake for 12 minutes or until cookies are set around edges. Let cool on wire rack.
