Orange Frosted Blueberry Cake
     Orange frosted blueberry cake is one of my all-time favorite desserts. I make it during the winter months with frozen blueberries and in the summer with fresh ones. This cake is on the denser side but extremely moist. Besides a pretty blue hue, the blueberries add a smooth and sweet taste to the cake. For the frosting I use freshly squeezed orange juice to thin out the powdered sugar. I made it for Independence Day this past week, but it will be showing up at our table many more times this year to come.

Orange Frosted Blueberry Cake

Serves: 12-16
Ingredients
  • FOR THE CAKE:
  • ½ cup butter, softened
  • 1&3/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1&1/2 cups whole milk
  • 3&1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 cups frozen blueberries
  • 1 Tablespoon flour
  • ------------
  • FOR THE ORANGE FROSTING:
  • 2 Tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • approx. ½ cup orange juice
  • 6 cups powdered sugar
Instructions
  1. Preheat oven to 375 degrees. Spray a 13"x9" pan with cooking spray.
  2. In a large bowl, cream together the butter and sugar. Next beat in eggs, vanilla, and milk.
  3. Stir in flour, baking powder, and salt until combined.
  4. In a medium bowl, toss frozen blueberries with 1 tablespoon of flour. Stir the coated blueberries into the cake batter.
  5. Pour into prepared pan. Bake for 50 minutes or until toothpick inserted in the center of the cake comes out clean. Cool in pan on wire rack.
  6. For the frosting: Combine all frosting ingredients, adding orange juice a little at a time, until desired consistency is reached. Stir until smooth.
  7. Frost cooled cake.
