Triple Vanilla Oatmeal Cookies
       I must be on an oatmeal cookie kick lately…because here comes another good recipe from the category. Unlike my crispy salted oat cookies, these babies are soft and fluffy. Using all brown sugar gives them a sweet, almost caramel flavor. Add this to the three kinds of vanilla in the ingredients (french vanilla pudding mix, vanilla extract, and vanilla bean), and you have a totally sweet, wonderfully fragrant cookie.

Serves: 55
  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant french vanilla pudding mix
  • 1 teaspoon pure vanilla extract
  • 1 vanilla bean, scraped
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1&1/2 cups old fashioned oats
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, vanilla extract, and vanilla beans. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda, followed by the oats.
  4. Drop by tablespoonfuls onto cookie sheets. Bake for 8-9 minutes or until cookies are set around edges. Let cool on wire rack.
