White Chocolate Banana Cream Date Oatmeal Cookies
       Several days ago I was baking cookies using instant banana cream pudding mix. I asked my husband what he would like for add-ins, but he couldn’t quite decide on one in particular. Therefore, this cookie has a myriad of flavors that somehow all fit together well. The backdrop of banana flavor is enhanced with the addition of dates and white chocolate chips. Oatmeal adds a pleasant framework to this unique cookie. To describe this concoction in two words, I would have to say “yummy” and “texture”!

  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant banana cream pudding
  • 1&1/2 teaspoon vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 2 cups white chocolate chips
  • 1 8oz. package chopped dates
  1. Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a large bowl, mix together butter, sugars, pudding mix, and vanilla. Stir well. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the rolled oats, followed by the white chocolate chips and dates.
  5. Drop by tablespoonfuls onto prepared cookie sheets. Bake for 8 minutes or until cookies are set around edges. Let cool on wire rack.
