Cheesecake Swirl Brownies
     This recipe is dedicated to my awesome nephew Matthew. Last month he visited my parents’ house for a month, where he worked for my dad to save up money for his car insurance. My husband, daughter, and I enjoyed several visits and outings with them during his stay. One night we went over to my folks’ house for dinner, and this is the dessert I brought.
     You may wonder what’s so special about cheesecake swirl brownies. One taste is all you need for an answer. They are the perfect union of brownies and cheesecake. Can’t decide between the two? Don’t want to bake both? Then make these wonderful bars.
     This creation was inspired by However, I gave it my own twist by using a from-scratch brownie recipe instead of a boxed mix. The brownie recipe stems back from my days as a teenager, when my go-to recipe was “Quick and Easy Brownies.” (I believe that recipe came from a Taste of Home magazine). It has no frosting because it is sprinkled with chocolate chips before baking, which gives it all the extra rich creaminess it needs.
     So here it is Matthew…the recipe you requested. And it all came to life because of you!
The first seven ingredients all go in the bowl to mix together-easy peasy.

You could add any variety of chips to the top of the brownie; Next time I’ll try white chocolate.

Cheesecake Swirl Brownies

  • 2 cups white sugar
  • 1&3/4 cups all-purpose flour
  • ½ cup baking cocoa
  • 1 teaspoon salt
  • 5 large eggs
  • ½ cup applesauce
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 8 oz. block cream cheese
  • ⅓ cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  1. Preheat oven to 350 degrees. Grease a 9"x13" cake pan.
  2. In a large mixing bowl, beat together 2 cups white sugar, flour, baking cocoa, salt, 5 eggs, applesauce, vegetable oil, and 1 teaspoon vanilla extract. Beat until smooth. Pour half of brownie batter into cake pan.
  3. In a medium bowl, beat together cream cheese, ⅓ cup white sugar, 1 egg, and 1 teaspoon vanilla until smooth. Place dollops of cream cheese on top of batter. Swirl with a knife evenly. Top with remaining half of brownie batter.
  4. Sprinkle top evenly with chocolate chips. Bake for 40 minutes, or until center is set and toothpick inserted near the center comes out clean.
