Chewy White Chocolate Chip Cookie
     Several years ago I found this recipe on the back of a Ghiradelli white chocolate chips bag. These cookies have appeared at many important occasions in my life, including my wedding and baby shower. If I’m just baking for my family, I cut the original recipe in half due to the large amount of cookies one batch makes.
     These cookies fluff up nicely while baking but still maintain a slight chewiness and crunch. There is a definite note of butteriness and brown sugar in this cookie, making them taste very rich and fulfilling.

  • ½ cup butter, softened
  • ¾ cups light brown sugar, packed
  • ¼ cup white vanilla sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1&1/2 cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups white chocolate chips
  1. Preheat oven to 350 degrees. In a medium bowl, cream together the butter, brown sugar, and white vanilla sugar. Add the egg and vanilla extract and stir until smooth.
  2. Add the flour, baking soda, and salt, stirring until well combined. Mix in the white chocolate chips until thoroughly incorporated.
  3. Drop by tablespoons onto cookie sheets. Bake for 10-11 minutes or until edges are golden brown.
