Milk Chocolate Oatmeal Pudding Cookies

     Here is a simple yet delicious recipe for oatmeal cookies with white chocolate chips. They have a very pleasant and rich flavor, thanks to the butter and usage of all brown sugar. These are on the softer side because I have added a package of instant french vanilla pudding mix. For a crispier cookie, bake for an extra 1-2 minutes.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant french vanilla pudding mix
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1&1/2 cups quick oats
  • 1 12 oz. bag milk chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, and vanilla extract. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda, followed by the oats.
  4. Fold in the milk chocolate chips.
  5. Drop by tablespoonfuls onto cookie sheets. Bake for 8-9 minutes or until cookies are set around edges. Let cool on wire rack.
