Pecan Pie Balls
     One of my husband’s favorite cookies are date balls. I had some extra Rice Krispies in the house, and thought I would do a spin on his regular date balls. I substituted pecans for the walnuts and used all brown sugar instead of the granulated. The result? A no bake cookie that tastes just like pecan pie! These babies have a deliciously rich penuche flavor thanks to the brown sugar. Add that to the crispy cereal, crunchy pecans, and chewy dates, and you have a myriad of heavenly textures that all work together well. So if you’re in the mood for pecan pie but don’t want to mess with a crust or turning on the oven, try these pecan pie balls out. You won’t be disappointed!

Serves: 40
  • ½ cup butter
  • 8 oz. package chopped dates
  • 2 egg yolks
  • ¾ cup packed light brown sugar
  • 1 & ½ cups rice cereal
  • 1 cup diced pecans
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for coating
  1. In a medium saucepan, over medium heat, bring butter, dates, egg yolks, and brown sugar to a boil.
  2. Boil 2 minutes, stirring constantly. Remove from heat and stir in rice cereal, pecans, and vanilla.
  3. Let mixture in pan cool in refrigerator about 15 minutes. (Mixture should be cool enough to handle but still pliable).
  4. Roll into tablespoon-sized balls. Place on waxed paper to set.
  5. Put powdered sugar in a ziploc bag. Shake several balls at a time in the sugar to coat evenly. Remove from bag and place on waxed paper.
  6. Roll balls one more time to make the powdered sugar adhere nicely.
