Soft & Chewy White Chocolate Pudding Cookies

The other day I had a craving for white chocolate chip cookies, but couldn’t decide whether to make soft pudding chip cookies with white chocolate chips or chewy white chocolate chip cookies. Instead of choosing, I merged the two recipes together. I removed some of the sugar in my chewy cookie recipe and added a package of instant white chocolate pudding mix. The result? A cookie that is curiously soft and chewy at the same time! (Did I mention they’re delicious too)?

  • ½ cup butter, softened
  • ½ cup light brown sugar, packed
  • ¼ cup white vanilla sugar
  • 1 pkg. instant white chocolate pudding mix
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1&1/2 cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups white chocolate chips
  1. Preheat oven to 350 degrees. In a medium bowl, cream together the butter, brown sugar, white sugar, and pudding mix. Add the egg and vanilla extract and stir until smooth.
  2. Add the flour, baking soda, and salt, stirring until well combined. Mix in the white chocolate chips until thoroughly incorporated.
  3. Drop by tablespoons onto cookie sheets. Bake for 8-9 minutes or until edges are golden brown.
