Stovetop Chocolate Pudding

     A few weeks ago we had a dinner at my parents’ house, and as usual I was given the task of dessert making. I wanted to bring a cake, but there is a flavor issue with my family. My dad prefers dark and milk chocolate, my husband and I prefer white chocolate and vanilla, and my mom comes in somewhere in the middle. (My 23 month old daughter likes anything sweet, so she is fair game)!
     So how to make a dessert that will please everyone…I decided upon a nice butter yellow cake mix, which I baked in a 9×13 pan. On the side I served this wonderful stovetop chocolate pudding and homemade vanilla custard. We simply cut large pieces of cake in horizontally through the middle, stuffed them with our choice of filling, and topped it off with a huge dollop of homemade sweetened whipped cream. (Too bad I was so focused on the chocolate pudding, I forgot to take a picture of the dressed-up cake)!
     As far as the pudding goes, I was quite pleased. It was quick, simple, yet tasted like I slaved for hours on it. This will be my go-to pudding recipe when I don’t have a boxed mix or feel like being more authentic. (And yes, my dad loved it too)!

Serves: 8
  • ½ cup brown sugar
  • ¼ cup cocoa powder
  • 3 Tablespoons cornstarch
  • ⅛ teaspoon salt
  • 2&3/4 cups whole milk
  • 2 Tablespoons butter
  • 1 teaspoon vanilla extract
  1. In a medium saucepan, combine brown sugar, cocoa powder, cornstarch, and salt. Whisk in milk. Cook over medium heat, whisking constantly, until mixture comes to a boil. Boil and stir for one minute. Remove from heat.
  2. Whisk in butter and vanilla. Let cool slightly. Pour mixture into bowl. Place plastic wrap on top of pudding to prevent skin from forming. Chill in refrigerator before serving.
