Amped Up White Chocolate Creamsicle Cookies
      You may be wondering why I call these cookies “amped up.” Well,  the addition of FRESHLY grated orange zest and TWO bags of white chocolate chips make them no ordinary cookie. They have an intense citrus flavor with a loud backdrop of vanilla bean and white chocolate texture and taste. Put it this way: these cookies are LOUD and PROUD to be called white chocolate creamsicle.

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small package instant white chocolate pudding
  • 1 vanilla bean, scraped
  • 1 Tablespoon freshly grated orange zest
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 12 oz. bags white chocolate chips
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugar, pudding mix, vanilla, and orange zest. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips.
  5. Drop by large spoonfuls (about 3 Tablespoons) onto cookie sheets. Bake for 10 minutes or until cookies are set around edges. Let cool on wire rack.
