Brownie Cookie Dough Ice Cream Cake
     My mother put on a beautiful barbeque meal with sides for Labor Day. I was in charge of dessert, but she requested that I respect people’s diets and only make one this time. How to decide what to do? Brownies? Cookies? Ice cream? How about all three?!
     I have been wanting to make a homemade ice cream cake for ages. My parents bought a Dairy Queen ice cream cake for my 29th birthday this summer, and that was delicious. So why not try my own? Inspired by the cookie dough ice cream cake at Alli n Son, I made some changes, including having a brownie for the base. I began the cake with the recipe for best brownies on allrecipes.com, using a springform pan. I then poured homemade chocolate fudge sauce on top, sprinkled it with crushed Oreos, layered a whole carton of chocolate chip cookie dough ice cream on top of that, and garnished it with eggless cookie dough balls.
     Everyone at my mom’s barbecue was very pleased with the results. Not only did the cake turn out beautifully, but it was extremely rich and delicious. Perhaps not the best for a healthy diet, but I don’t think it hurts to cheat every now and then. Do you?

Ingredients
  • For the Brownie Base:
  • ½ cup butter
  • 1 cup vanilla sugar
  • 2 large eggs
  • 1&1/2 teaspoons vanilla extract
  • ⅓ cup cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • -------
  • For the hot fudge center:
  • 1 14 oz. can sweetened condensed milk
  • ⅔ cup semi-sweet chocolate chips
  • 2 Tablespoons butter
  • 1&1/2 teaspoons vanilla extract
  • -------
  • For the cookie center:
  • 18 Oreos, crushed
  • -------
  • For the ice cream topping:
  • 1.5 quarts cookie dough ice cream, softened
  • -------
  • For the cookie dough ball garnish:
  • ½ cup butter, softened
  • ¾ cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 14 oz. can sweetened condensed milk
  • ½ cup miniature chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Grease and flour a 9" springform pan.
  2. For the brownie base: In a medium saucepan, melt the butter. Stir in the sugar, followed by the eggs and vanilla. Add the flour, cocoa powder, baking soda, and salt, stirring until smooth.
  3. Pour into prepared pan. Bake for 25 minutes or until edges are set and center still looks moist. Cool slightly on shelf and then freeze.
  4. For the hot fudge center: Combine all ingredients in a medium saucepan. Cook over low heat, stirring constantly, until chips have melted and mixture is smooth. Pour over frozen brownie. Spread evenly, covering sides. Return to freezer. Freeze for 2 hours.
  5. Sprinkle the crushed Oreos evenly over frozen fudge center. Return to freezer. Freeze 2 more hours.
  6. For the ice cream topping: Let ice cream soften on shelf about 20 minutes. Spread over crushed cookie center. Return to freezer. Freeze several hours or overnight before serving.
  7. For the cookie dough ball garnish: Combine butter, brown sugar, vanilla, flour, and milk. Stir in the chocolate chips. Form into small balls. Freeze one hour. Garnish circumference of ice cream cake with frozen cookie dough balls. Return to freezer until ready to serve.
  8. To serve: Allow cake to thaw on shelf about 10 minutes. Cut using a sharp knife and enjoy!
