Caramel Bits Cookies
     I am not sure how long they have been available, but I noticed these Caramel Bits for the first time a few weeks ago. My husband really likes the taste of the classic square caramels, but I have never actually used them for baking before. When he saw these caramel bits while grocery shopping, he asked if I would try them in a cookie recipe.
     I used my mom’s pudding chip cookies recipe to make these babies, swapping out the semi-sweet chocolate chips for the caramel bits. I also added 1/2 teaspoon extra vanilla extract to boost up the caramel effect. I learned the hard way with the first sheet that you should cook the cookies on parchment paper. (Otherwise the bits stick to the pan).
     These cookies make a nice treat and a pleasant change-up from your normal chocolate chip cookie. I won’t be making these often, but they will be a nice recipe to go to when we want something different or are in the mood for caramel.
Use the whole 11 oz. bag in the cookie recipe.
Lining the cookie sheets with parchment paper prevents the caramels from sticking.

Ingredients
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant french vanilla pudding
  • 1&1/2 teaspoon vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 11 oz. bag Kraft caramel bits
Instructions
  1. Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a large bowl, mix together butter, sugars, pudding mix, and vanilla. Stir well. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the caramel bits.
  5. Drop by tablespoonfuls onto prepared cookie sheets. Bake for 8 minutes or until cookies are set around edges. Let cool on wire rack.
