White Chocolate Cherry Cookies
    There is nothing quite like a white chocolate chip cookie in our household, but sometimes the same recipe gets old. I like to switch up the mix-ins from time to time, and this week I am featuring dried cherries. I have added dates to my white chocolate chip cookies in the past, and thought the cherries would add some unique tartness and festive red color. The cherries themselves were on the large side, about the size of 4 or 5 white chocolate chips. The cookies tasted wonderfully sweet, but the nice surprise was the occasional twang you got from biting into one of those large cherries.

Ingredients
  • 1 cup butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup white sugar
  • 1 small package instant white chocolate pudding
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12 oz. bag white chocolate chips
  • 1 5 oz. bag dried cherries (about 1 heaping cup)
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, mix together butter, sugars, pudding mix, and vanilla. Stir well.
  2. Add the eggs and stir well.
  3. Mix in the flour and baking soda.
  4. Fold in the white chocolate chips and cherries.
  5. Drop with a 3 tablespoon scoop onto cookie sheets. Bake for 10 minutes or until cookies are set around edges. Let cool on wire rack.
