White Chocolate Chip Fudgy Red Velvet Cookies

3 Tablespoon scoops of cookie dough ready to be baked
The centers of the cookies should be not quite set when you pull them out of the oven;
They will continue to bake as they cool on the cookie sheet.

     I have come to learn that when making pudding chip cookies, the options are nearly endless. Just think of the different kinds of instant pudding flavors, the myriad of mix-ins, and the numerous extracts out there. I concentrated in mathematics as an undergraduate student, and the permutation for the possibilities are higher than the average person would desire to count.
     For this week’s pudding chip cookie, I used instant chocolate fudge pudding mix, vanilla extract, and white chocolate chips. Add a heaping teaspoon of red food coloring to enhance the eyes, and you have white chocolate chip fudgy red velvet cookies.

Ingredients
  • 1 cup butter softened
  • 1 cup light brown sugar, packed
  • 1 small pkg. instant chocolate fudge pudding mix
  • 1 teaspoon pure vanilla extract
  • 1 heaping teaspoon red food coloring
  • 2 large eggs
  • 2&1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 12oz. bag white chocolate chips
Instructions
  1. Preheat oven to 375 degrees. In a large bowl, cream together the butter, brown sugar, pudding mix, vanilla, and red food coloring.
  2. Stir in the eggs.
  3. Add the flour and baking soda, stirring until well combined. Stir in the white chocolate chips. Drop by large spoonfuls onto cookie sheets.
  4. Bake for 10-11 minutes, or until edges are slightly golden and centers are almost set.
