Pink Valentine Funfetti Fudge

In the past I have tried my hand at fudge with sprinkles. First, I made Funfetti Fudge with vanilla extract and no added color. Next I made Birthday Cake Fudge with almond extract and blue food coloring. This time, in honor of Valentine’s Day, I used vanilla and almond extracts with red food coloring. After experimenting, I believe that the mixture of both vanilla and almond extracts really “takes the cake.” And who doesn’t love pink on February 14th?

Ingredients
  • ¾ cup butter (1 & ½ sticks)
  • 3 cups white sugar
  • ¾ cup evaporated milk
  • 12 oz. white baking chips
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon red food coloring
  • 7 oz. jar Marshmallow Creme
  • 1 cup rainbow sprinkles, frozen
Instructions
  1. In a large saucepan over medium heat, stir together butter, sugar, and evaporated milk. Stirring constantly, bring mixture to a ROLLING boil. Boil and continue stirring constantly for 5 minutes.
  2. Remove from heat and immediately stir in the white chips, vanilla extract, almond extract, and food coloring.
  3. Quickly stir in marshmallow creme until no lumps remain.
  4. Stir in frozen rainbow sprinkles, just enough to incorporate.
  5. Pour into a greased 9x13 inch pan. Let cool four hours on shelf or almost 2 hours in refrigerator before cutting.
