We don’t allow our two year old daughter many sweets, but she is allowed to pick a special snack before going to bed. Oftentimes this is a small handful of M&M’s. Back in January I bought a large bag of the Valentine colored M&M’s, made up of red, pink, and white. So early in February when my husband asked me for M&M cookies, I knew just what I wanted to put in them.
I used my Ghiradelli white chocolate chip cookie recipe (the one found on the back of the bag). Unlike pudding chip cookies, these cookies are crisp on the edges and chewy in the middle. I substituted the M&M’s for the white chocolate chips and added about 1/4 teaspoon of red food coloring. The cookies turned out beautifully, and my only qualm was that the red seems to fade as the cookies bake. Next time I would double the amount of food coloring for a more vibrant hue.
My husband, daughter, and I really enjoyed these festive cookies. The sweetest part was watching my little girl’s face light up when she saw the cookies coming out of the oven. (Not only were they PINK, but they were loaded with her favorite candy)!

Ingredients
  • 1 cup butter, softened
  • 1&1/2 cups white sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 Tablespoon vanilla extract
  • ½ teaspoon red food coloring
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 3 cups all-purpose flour
  • 1 12 oz. bag Valentine M&M's (2 cups)
Instructions
  1. Preheat oven to 350 degrees. In a large bowl, beat together the butter and sugars until light and fluffy. Beat in the eggs, vanilla, and food coloring.
  2. Stir in the salt, baking soda, and flour until well combined. Add the M&M's and stir.
  3. Drop dough with a 3 Tablespoon capacity scoop onto ungreased cookie sheets. Bake for 15 minutes or until set.
