Chocolate Fudge Oatmeal M&M Cookies

A few days ago I posted the recipe for Chocolate Fudge M&M Cookies. I used that recipe as a springboard for chocolate oatmeal cookies. I kept the main ingredients the same, except for increasing the vanilla extract. I decreased the flour by 1/2 cup and added 1&1/2 cups of rolled oats. The result? A decadent, fudgy chocolate cookie, loaded with M&M’s, that you don’t feel too guilty about eating. After all, oatmeal is healthy for you, right?!

  • 1 cup butter, softened
  • 1 cup packed light brown sugar
  • 1 small package instant chocolate fudge pudding
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1&3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1&1/2 cups rolled oats
  • 2 cups miniature M&M's
  1. Preheat oven to 375 degrees.  In a large bowl, cream together the butter, sugar, pudding mix, and vanilla.
  2. Stir in the eggs and mix well.
  3. Stir in the flour and baking soda, followed by the oats. Stir in the M&M's.
  4. Drop with a 1&1/2 Tablespoon cookie scoop onto cookie sheets. Using hands, form into balls and flatten slightly.
  5. Bake for 9 minutes, or until edges are lightly golden. Let cool on pans for 10 minutes before removing to wire racks.
