What does one do with a craving for cake and cookies? She makes cake mix cookies! I had a box of Rainbow Chip cake mix in my cupboard, (which has always been my favorite). I used a technique similar to that when one makes funfetti cake mix cookies, substituting the rainbow chip mix instead. I also added one cup of white chocolate chips to the batter.
The cookies are pretty much what I expected them to be; they are moist and dense with a definite cake flavor. The white chocolate chips add a nice touch of rich creaminess. They are quick and easy to make, and I will be keeping this recipe on hand when I need some delicious cookies fast.

  • 1 (15.25oz. pkg.) Party Rainbow Chip cake mix
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips
  1. Preheat oven to 350 degrees. In a large bowl, beat together the cake mix, oil, and eggs until smooth.
  2. Stir in the white chocolate chips.
  3. Drop by tablespoon onto an ungreased cookie sheet. Bake for 10 minutes or until bottoms of cookies are golden.
