Two weeks ago I posted the recipe for Chocolate Fudge Oatmeal M&M Cookies. Those cookies were so successful, I thought I’d try them once again with a different type of instant pudding mix. Rather than using the chocolate fudge instant pudding mix, I experimented with the white chocolate mix. It is hard to conclude which one was my favorite, as these cookies are also moist, chewy, sweet, and oh so yummy. The white chocolate flavor from the pudding is very present but not overwhelmingly so. As my two and a half year old daughter said, “They’re deeee-licious!”

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • 1 small pkg. instant white chocolate pudding mix
  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 1&3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1&1/2 cups rolled oats
  • 1 11 oz. bag mini M&M's
  1. Preheat oven to 375 degrees. In a large bowl, cream together butter, brown sugar, pudding mix, and vanilla.
  2. Stir in eggs.
  3. Add flour and baking soda and stir well. Add oatmeal followed by M&M's and stir until combined. Drop by large tablespoon onto cookie sheets.
  4. Bake for 9 minutes or until edges are lightly golden and centers are almost set.
