White Chocolate Reese’s Pieces Pumpkin Spice Oatmeal Cookies
Scoop out cookie dough onto baking sheets.
Flatten cookie dough slightly using palm of hand or bottom of drinking glass.
Let the cookies cool on a wire rack before serving.

I am forever trying out new recipes for cookies, and three of my favorite ingredients to use are instant pudding mix, white chocolate chips, and rolled oats. For this recipe, I used the Jello instant pumpkin spice pudding mix, threw in a bag of white chocolate chips, and tossed in a couple cups of rolled oats. Just for fun, I added a 10 ounce bag of Reese’s Pieces mini baking candies.
These cookies have a very delicious, yet very unique flavor. The spiciness from the pudding mix is mellowed out by the sweet creaminess of the white chocolate chips. The rolled oats add a chewy texture, while the Reese’s Pieces contribute a nice crunch and peanut butter note.

  • 1 cup butter, softened
  • 1 cup packed dark brown sugar
  • 1 small package instant pumpkin spice pudding mix
  • 1 Tablespoon vanilla extract
  • 2 large eggs
  • 1&1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 12 oz. bag white chocolate chips (2 cups)
  • 10 oz. bag mini Reese's Pieces (1&1/3 cups)
  1. Preheat oven to 375 degrees.  In a large bowl, cream together the butter, sugar, pudding mix, and vanilla.
  2. Stir in the eggs and mix well.
  3. Stir in the flour and baking soda, followed by the oats. Stir in the white chocolate chips and Reese's Pieces.
  4. Drop with a 1&1/2 Tablespoon cookie scoop onto cookie sheets. Using hands, form into balls and flatten slightly.
  5. Bake for 9 minutes, or until edges are lightly golden. Let cool on pans for 10 minutes before removing to wire racks.
