Carrot Cake with Cream Cheese Frosting (The BEST)!

My family has used the same recipe for carrot cake since I was a little girl. It has shown up at many Easter dinners, and this past year it made its way to the Thanksgiving table. The original recipe calls for a whopping 1&1/4 cups of vegetable oil, so to lighten it up a bit I substituted part of the oil for applesauce. (The cake tasted as delicious as ever, and nobody could tell the difference).
I have tried several different carrot cake recipes, but I always come back to this one. It is super moist, sweet yet slightly spicy, and dotted with the perfect amount of walnuts. (Pecans can be substituted  if desired). The cream cheese frosting is divine, and each piece is generously coated with the rich creamy icing.

Ingredients
  • For the Carrot Cake:
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • dash of salt
  • ¾ cup vegetable oil
  • ½ cup applesauce
  • 4 large eggs
  • 3 cups grated carrots
  • ¾ cup walnuts
  • ------------
  • For the Cream Cheese Frosting:
  • 1 8oz. pkg. cream cheese
  • 1 stick butter, softened
  • 1 16oz. pkg. powdered sugar (4 cups)
  • 1 Tablespoon vanilla extract
Instructions
  1. For the Carrot Cake: Preheat oven to 350 degrees. Grease a 9"*13" cake pan.
  2. In a large bowl, stir together the sugar, flour, baking soda, cinnamon, and salt.
  3. Add oil and mix well.
  4. Add eggs and beat well.
  5. Add carrots and walnuts, stirring well.
  6. Pour batter into prepared cake pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Frost while cake is still warm.
  7. For the Cream Cheese Frosting: Beat cream cheese and butter until smooth. Add the powdered sugar and vanilla, beating well.
  8. Spread frosting over warm cake. When cake has cooled, refrigerate.
