Hearty & Healthy Turkey Chili

It may be late April, but here in western New York we are experiencing a lovely phenomenon known as a nor’easter. It’s hard to believe we had sixty and seventy degree temperatures last week, as today is a chilly thirty-two degrees out.
Speaking of chilly, nothing warms me up better on a cold day than a steeping hot bowl of chili. Below is one of my favorite meals to make in my slow cooker, and has been adapted from several different soup and chili recipes. You can substitute any meat you like (I have used ground chicken, ground beef, and even sweet Italian sausage). This chili is spicy, but not to the point where you will burn your taste buds out, (so adjust the chili powder according to your preferences).

  • 1.20 lbs. lean ground turkey meat
  • 1 large vidalia onion, chopped
  • 1 large green pepper, chopped
  • ¼ teaspoon garlic powder
  • 1 26 oz. jar Ragu (tomato, onion, & garlic)
  • 1 14.5 oz. can stewed tomatoes, drained & chopped
  • 2 10 oz. jars Rotel diced tomatoes & green chiles
  • 2 15 oz. cans whole kernel sweet corn
  • 1 15.5 oz. can black beans, drained
  • 1 15.5 oz. can kidney beans, drained
  • 1 15.5 oz. can cannelini beans, drained
  • 2 Tablespoons Mexican chili powder
  • 1 heaping Tablespoon sugar
  • 1 teaspoon ground cumin
  1. Sprinkle turkey and onion in a large skillet with garlic powder. Cook over medium heat until turkey is browned and no red remains. Add to slow cooker.
  2. Add all remaining ingredients to slow cooker. Stir until combined. Cook on HIGH heat for 4 hours, or LOW heat for 7 hours.
