Moist & Fluffy Chocolate Cupcakes

Back in September, I made these cupcakes for my dad’s birthday. I found the recipe on the blog For the Love of Cooking, and decided to give it a shot. These cupcakes are the lightest homemade cupcakes I have made thus far. They are springy and fluffy, just like you would expect from a boxed mix. The only difference is they have that wonderful homemade flavor one finds hard to resist.

  • ½ cup white sugar
  • ½ cup brown sugar
  • ¾ + 2 tbsp flour
  • ¼ cup + 2 tbsp cocoa powder
  • ¾ tsp baking soda
  • ¾ tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • ½ cup of milk
  • ¼ cup of vegetable oil
  • 1 tsp vanilla
  • ½ cup boiling water
  1. Preheat oven to 350 degrees. Line a 12 cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together dry ingredients.
  3. Whisk in egg, milk, oil, and vanilla until no lumps remain. Whisk in boiling water until smooth.
  4. Divide batter, using a ¼ cup measure, among muffin tins. Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool and frost with your favorite chocolate frosting.

  1. wow!!! amazing, do you think you could put up the frosting you used, ive made loads but havnt found the right one!!!
