One of my husband’s favorite kinds of cookies is peanut butter. I don’t care much for peanut butter desserts, so when I make them, I always end up with too many leftovers. However, my friend at church has something in common with my husband: one of her favorite cookies is peanut butter too. This means that if I make cookies for my husband, my friend is going to get half the batch, and vice-versa.
There is only one problem I find with baking peanut butter cookies: Once I found an excellent recipe, I had a tough time getting myself to experiment with other ones. So when I saw these peanut butter M&M blondies on Greens and Chocolate, I knew I wanted to try them (with a few tweaks). I used half light brown sugar and half dark brown sugar, added in vanilla beans with the extract, and used a whole bag of peanut butter M&M’s, (minus the handful my daughter snuck while I was mixing things together).
These bars turned out wonderfully. They were just what I was looking for in a peanut butter bar cookie: chewy yet moist, sweet but not overpowering, and topped off with a chocolate candy bonus. Let me tell you a secret: I may not be a fan of peanut butter cookies, but I ate a few of these bars–they were that good!

  • ½ cup butter
  • 1 cup packed light brown sugar
  • 1 cup packed dark brown sugar
  • ½ cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1 large vanilla bean scraped
  • 2 large eggs
  • 2&1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large bag peanut butter M&M's (2 cups)
  1. Preheat oven to 350 degrees. Spray a 9x13 inch cake pan with nonstick cooking spray.
  2. In a medium saucepan, melt the butter over low heat. Add the brown sugars and stir over low heat until butter/sugar mixture is smooth and melted. Remove from heat and stir in peanut butter. Set aside to cool slightly.
  3. In a large bowl, stir together the flour, baking powder, baking soda, and salt. Set aside.
  4. To the cooled saucepan mixture, add the vanilla extract, vanilla beans, and eggs. Beat well.
  5. Pour the saucepan mixture into the flour mixture, stirring until well-combined. Pour mixture into prepared cake pan. (Batter will be thick; use a wooden spoon to spread to sides and smooth top).
  6. Place M&M's evenly over the top of the batter, pressing down lightly with hand.
  7. Bake for 23-25 minutes, until a toothpick inserted in the center comes out clean or with just a few crumbs attached. Cool and cut into bars.
