One of my husband’s favorite cookies are date balls, and I make them several times a year during the holidays and just for the fun of it. One day I decided to give them a twist, and I added white chocolate chips in place of some of the Rice Krispies and walnuts.
These cookies need to stay in the refrigerator to prevent the white chocolate from becoming too soft.  Chilled from the fridge, they are sweetly decadent with a pleasant crunch. My husband enjoyed them, although they were a bit too sweet for his preference. Nothing can ever be “too sweet” for my taste buds, and these were finished off by me in the proceeding days.

Ingredients
  • ½ cup butter
  • 8 oz. package chopped dates
  • 2 egg yolks
  • ¾ cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup rice cereal
  • ½ cup chopped walnuts
  • 1&3/4 cups white chocolate chips
Instructions
  1. In a medium saucepan, over medium heat, bring butter, dates, egg yolks, and sugar to a boil.
  2. Boil 2 minutes, stirring constantly. Remove from heat and stir in vanilla. Stir in rice cereal and walnuts, followed by white chocolate chips. Stir until just combined.
  3. Let mixture in pan cool in refrigerator about 15 minutes. (Mixture should be cool enough to handle but still pliable).
  4. Roll into tablespoon-sized balls. Place on waxed paper to set. Refrigerate immediately. Keeps well in refrigerator up to 10 days.
