White Chocolate Peanut Butter Oatmeal Cookies

To continue on the peanut butter theme of the week, here is a wonderful peanut butter cookie that is dotted with delicious white chocolate chips. The rolled oats give these chewy cookies some added texture. I used white vanilla sugar for this recipe, but regular granulated sugar will work just as well. (Just add a splash of extra vanilla extract to the dough).

  • 1 cup butter, softened
  • 1 cup light brown sugar, packed
  • ¾ cup white vanilla sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1&1/2 teaspoons vanilla extract
  • 1&1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1&1/2 cups rolled oats
  • 2 cups white chocolate chips
  1. Preheat oven to 350 degrees. In a large bowl, cream together butter, sugars, and peanut butter.
  2. Beat in the eggs and vanilla.
  3. Stir in the flour, baking soda, and salt until combined. Add the oatmeal followed by the white chocolate chips.
  4. Drop by tablespoons onto cookie sheets. Bake for 11-12 minutes or until lightly golden on edges and set in the center.
