White Chocolate Strawberry Cheesecake Cookies

My husband helped me come up with the idea for these cookies. Last week I asked him what kind of treat he had a craving for, and he said strawberry cookies. I didn’t have fresh strawberries or strawberry extract in the house, but I did have freeze dried strawberries in the cupboard that my daughter likes to munch on. I also had a block of cream cheese that was going to be outdated in two days. So I took the idea of a pudding chip cookie to the next level, using cream cheese in place of half of the butter. The result? These cookies were awesome. They were soft and fluffy with a slight tang from the cream cheese, but sweet and fruity from the freeze dried strawberries. The white chocolate pudding mix and white chocolate chips added just the right amount of creamy richness to this delectable treat.

  • 1 8 oz. package cream cheese, softened
  • 1 cup butter, softened
  • 1&1/2 cups light brown sugar, packed
  • ½ cup white sugar
  • 2 small packages instant white chocolate pudding mix
  • 1 Tablespoon pure vanilla extract
  • 4 large eggs
  • 4&1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups freeze-dried strawberries (2 oz.)
  • 4 cups white chocolate chips (2 12 oz. bags)
  1. Preheat oven to 375 degrees. In a stand mixer, beat together the cream cheese, butter, brown sugar, white sugar, pudding mixes, and vanilla until creamy and well-combined.
  2. Beat in the eggs until fluffy.
  3. Add the flour and baking soda in three additions, beating on low speed after each addition.
  4. Add the strawberries and white chocolate chips. Beat until well-combined. (The strawberries will break up during this process, which is what you want to happen).
  5. Drop dough with a three tablespoon cookie scoop onto ungreased baking sheets. Bake for 10 minutes or until edges are lightly golden and centers are almost set.
